A Cuisine Born from Crossroads

Uzbek food is the flavour of the Silk Road itself. For two thousand years, the caravans that passed through these cities carried not only silk and spices but also recipes, techniques and ingredients that blended with local traditions to produce one of the richest culinary cultures in Central Asia. Mosaique food journeys take you into this living kitchen, past the tourist restaurants and into the places where real Uzbek cooking happens.

The morning begins in the bazaar. Samarkand's Siyob market is one of the great sensory experiences of Central Asia. Stalls overflow with dried apricots, walnuts, pomegranates and figs. Women in colourful dresses sell rounds of freshly baked non, the circular Uzbek flatbread still warm from the clay tandoor. Spice merchants measure out cumin, coriander and barberry by weight, packaging them in paper cones. We walk these markets slowly, tasting as we go, learning what is seasonal and what is found only here.

At midday, we arrange lunch with local families who take genuine pride in their tables. A proper Uzbek spread unfolds across a low table: manti dumplings filled with lamb and onion, lagman noodle soup with slow-cooked vegetables, achichuk salad of ripe tomatoes and thin-sliced onion, and always, at the centre, a great dish of plov. Plov is the national dish, and every city in Uzbekistan insists its own version is the finest. Tasting them all is not a challenge but a pleasure.

We offer private plov cooking experiences with local masters who have tended their kazan, the massive cast-iron cauldron, for decades. The preparation of plov is a ceremony as much as a recipe: the sequence of oil, onion, carrot and rice must be exact, the timing intuitive. Standing at the kazan and learning the method from the man who invented his own variation of it is an experience that stays with you far beyond the meal itself.

In Bukhara, we arrange private dinners in vine-shaded courtyards, where a single family prepares a menu that reflects generations of hospitality. In Tashkent, we explore the covered Chorsu Bazaar, where the same stalls have operated under the same families for decades. Every food journey ends with you carrying new recipes, new ingredients and new friendships formed around the table.

In Uzbekistan, feeding a guest is an act of honour. To sit at a family's table is not simply to eat. It is to be trusted with something precious.
